A rooftop in the middle of Brooklyn may seem like an unlikely place to have a sprawling farm, but the team at Gotham Greens has been growing and harvesting year-round, premium quality, pesticide-free greens since 2009. When Delta was looking for a local supplier for its Union Square Cafe-created menus, Gotham Greens was just the place.
The hyper-locality of the produce they grow means Delta One customers can enjoy fresh ingredients like basil and lettuce, which are harvested 365 days a year.
Local eats are key to the food-making philosophy of Union Square Cafe Executive Chef and Partner Carmen Quagliata whose meals will begin appearing on select trans-Atlantic routes to Europe departing JFK International in the Delta One cabin March 1. Customers will enjoy Gotham Greens fresh basil in pesto and basil cream sauces served on board.
In addition to Gotham Greens, the menu will also feature local New York-based purveyors such as Mountain Sweet Berry Farms, Five Acre Farms and Cascun Farms.

Incorporating local suppliers and purveyors such as Gotham Greens plays a vital role in Delta’s approach to offering fresh, local and seasonal food to its customers.
Across its network, Delta’s consulting chefs such as Linton Hopkins, Michelle Bernstein, Michael Chiarello and select chefs from Danny Meyer’s Union Square Hospitality Group have artfully created menus using, where possible, ingredients produced by local purveyors and artisan suppliers.
