Make mine a hefeweizen! And my Bavarian-born mother would be horrified if you eat that weisswurst with spicy mustard. The traditional weisswurst mustard is a sweet mustard. The top German brand of sweet mustard is Handlmaier’s, from Regensburg, like the one in my fridge right now.
